How Much Turkey Per Person? What Size Bird to Buy
Plan about 1 pound of whole turkey per person, or 1 1/2 pounds if you want leftovers or have big eaters. So what size turkey do you need? For 10 people, a 10 to 15 lb bird; for 14 people, 14 to 21 lb; for 20 people, 20 lb, or two smaller birds if you want leftovers. Buying a breast instead, plan 3/4 lb per person bone-in or 1/2 lb boneless. Those are the standard extension-service figures, and they already allow for the bones, skin and cooking loss that a whole bird carries.
The pound-per-person rule looks generous until you remember how much of a raw turkey never reaches a plate. Colorado State University Extension’s first-turkey guide puts it plainly: 1 pound per person “accounts for the weight of bones, skin and some evaporation during cooking.”
What size turkey do I need? The chart
Find your headcount, then pick the column that matches the meal you want.
| Guests | Whole turkey | Whole turkey, with leftovers | Bone-in breast | Boneless breast |
|---|---|---|---|---|
| 6 | 6 lb | 9 lb | 4 1/2 lb | 3 lb |
| 8 | 8 lb | 12 lb | 6 lb | 4 lb |
| 10 | 10 lb | 15 lb | 7 1/2 lb | 5 lb |
| 12 | 12 lb | 18 lb | 9 lb | 6 lb |
| 14 | 14 lb | 21 lb | 10 1/2 lb | 7 lb |
| 16 | 16 lb | 24 lb | 12 lb | 8 lb |
| 18 | 18 lb | 27 lb (or two birds) | 13 1/2 lb | 9 lb |
| 20 | 20 lb | 30 lb (two birds) | 15 lb | 10 lb |
| 25 | 25 lb (or two birds) | 37 lb (two birds) | 19 lb | 12 1/2 lb |
| 30 | 30 lb (two birds) | 45 lb (two birds) | 22 1/2 lb | 15 lb |
The figures are straight arithmetic from the per-person rules: 1 lb and 1 1/2 lb for a whole bird, from Illinois Extension’s turkey buying guide, and 3/4 lb bone-in or 1/2 lb boneless breast, from Colorado State. Round up to the nearest bird you can actually find. Turkeys are sold by the pound, not to order.
Once the headcount pushes past about 20 pounds of bird, we would rather roast two smaller turkeys, or one turkey plus a bone-in breast, than hunt for one giant one. A second, smaller bird is easier to fit in a home oven next to the side dishes, and the extra white meat is usually what a big table runs out of first.
What size turkey for 14 people?
A 14 lb turkey feeds 14 at the standard 1 lb each. If you want sandwiches on Friday, buy 21 lb, or a 14 lb whole bird plus a 7 lb bone-in breast. A 14 lb bird also leaves most of an oven free for the sides, which matters more on the day than it sounds.
When to buy less, and when to buy more
Illinois Extension adds three adjustments worth knowing:
- Two meats on the table? “If you are serving more than one type of meat, you should probably buy the lesser amount.” Stick with 1 lb per person even if you wanted leftovers, and size the second meat from our ham per-person chart, which has a turkey-plus-ham worked example.
- Lots of kids? “For large gatherings where there will be a combination of adults and children, figure one pound per person to allow for the large and smaller appetites.” In other words, don’t shave the total for small appetites. Teenagers make up the difference.
- Pre-stuffed bird? Allow 1 1/2 lb per person, because the stuffing is part of the weight you paid for.
Kansas State’s Johnson County Extension, in its Thanksgiving countdown, uses the same 1 lb, 3/4 lb and 1/2 lb figures and says “these amounts allow for plenty of leftovers.” So treat the 1 1/2 lb column as the generous end, not the minimum.
Whole bird or just a breast?
For 6 or fewer people, a breast is usually the easier buy. You get the white meat most people reach for, in a fraction of the oven time, with none of the “what do we do with 9 pounds of turkey” problem. A bone-in breast roasts juicier. A boneless one carves into neat slices and is the easiest of all to scale. The breast columns in the chart work just as well as a top-up for a big group, alongside one whole bird.
If you are feeding a crowd with other mains too, our meat per person guide covers the buffet adjustment that applies to everything on the table.
How long a frozen turkey takes to thaw
The size you pick decides the day you start thawing. Colorado State’s rule is 24 hours in the fridge for every 4 to 5 lb of frozen turkey, and a thawed bird keeps another 24 to 48 hours in the fridge before cooking.
| Turkey size | Fridge thaw time |
|---|---|
| 8–12 lb | 2 to 3 days |
| 12–16 lb | 3 to 4 days |
| 16–20 lb | 4 to 5 days |
| 20–24 lb | 5 to 6 days |
For a Thursday Thanksgiving with a 20 lb bird, that means moving it to the fridge by the Saturday or Sunday before. Short on time, South Dakota State Extension’s holiday meat guide describes the cold-water method: about 30 minutes per pound in its sealed wrapper, changing the water every 30 minutes, and cooking it right away afterwards.
SDSU also gives the doneness rule: cook until the thickest part of the inner thigh reaches 165°F, and check the wing and the thickest part of the breast too. An instant-read meat thermometer settles it in a second, and a 16-inch roasting pan with a rack keeps the bird out of its own drippings, which you want for the gravy.
Thanksgiving sides per person
The turkey is the easy number. These are the ones people forget to scale:
| Side | Per person | For 8 | For 12 | For 20 |
|---|---|---|---|---|
| Stuffing | 3/4 cup | 6 cups | 9 cups | 15 cups |
| Mashed potatoes (raw potatoes) | 1/2 lb | 4 lb | 6 lb | 10 lb |
| Gravy | 1/3–1/2 cup | 3–4 cups | 4–6 cups | 7–10 cups |
| Cranberry sauce | 1/3–1/2 cup | 3–4 cups | 4–6 cups | 7–10 cups |
| Rolls | 1–2 | 8–16 | 12–24 | 20–40 |
| Pie | 1 slice (1/8 pie) | 1–2 pies | 2–3 pies | 3–5 pies |
The stuffing, gravy and pie figures come from Whole Foods Market’s holiday servings chart and WebstaurantStore’s Thanksgiving portion guide, and the cranberry range from Sur La Table’s menu planner. The rolls and pie rows are ranges on purpose. WebstaurantStore plans one roll and one slice of pie each, Whole Foods plans a pie for every four guests, and a table offering two kinds of pie needs the higher number. For potatoes, our potatoes per person chart has the full breakdown, including why Thanksgiving is the one day to go up to 3/4 lb. You can make the mash a day ahead, then reheat the mashed potatoes on the day without them going gluey.
Stuffing the bird itself? Johnson County Extension allows “about 3/4 cup of stuffing per pound of turkey,” stuffed loosely, with the extra baked in a dish. Like the bird, stuffing has to reach 165°F.
FAQ
How much turkey do I need for 20 people?
About 20 lb of whole turkey at 1 lb per person, or 30 lb if you want leftovers, which is easiest as two 15 lb birds. With a ham on the table too, 20 lb is plenty.
Is 1 pound of turkey per person enough?
Yes, for a whole bird. The pound is raw weight with the bones, so it works out to a generous plate of meat each, with some left over. Go to 1 1/2 lb for hearty eaters or planned leftovers.
How much boneless turkey breast per person?
About 1/2 lb raw per person, according to Colorado State and Kansas State extension. Allow 3/4 lb for a bone-in breast.
How big a turkey for 8 adults?
An 8 lb bird covers dinner. If the smallest birds in your store start higher, a 10 to 12 lb turkey is the practical buy, and it gives you leftovers. A 6 lb bone-in breast is the other route.
When should I buy a frozen turkey?
Any time you have freezer space. Then count back from the meal, at a day in the fridge for every 4 to 5 lb, to choose the day it moves to the fridge.
